He and his team believe in using only the best and freshest ingredients, purchased from local farmers wherever possible. Local elderberry, for instance, has a special place in this kitchen. More than 2,000 years ago, the health-giving effects of the elderberry were remarked upon by Hippocrates, the Greek doctor and philosopher.
